How does freeze drying affect the fruit?
It really doesn’t that much, apart from the texture. Because freeze drying doesn’t apply heat, freeze-dried food retains 97% of its nutrients, as opposed to dehydrated fruit at 60%, and canned fruit at 40%. It also retains its smell, flavour, and colour.
In addition, freeze drying food can extend the shelf-life of a food by up to 25 years. This goes a long way towards fighting food waste, which is a big problem in our society.
