Recipe: Vegetarian Split Pea Soup

On a cold day like today, nothing hits the spot like SOUP! Vegetarian Split Pea Soup, to be exact. It’s hard to find a good split pea soup made without ham, but this recipe does it! It even makes use of your leftover kale stems, which are full of fibre.

Ingredients

1 Tbsp Omega Nutrition Organic Coconut Oil (this one has a neutral flavor)

2 large organic onions, finely chopped

1 organic carrot, finely chopped (if you use organic, you don’t have to peel the carrot!)

1 cup chopped organic kale stems

1/2 tsp fine sea salt

2 cups organic yellow split peas

6 cups filtered water

1/2 GoBio Organic Low Sodium Vegetable Bouillon Cube

Juice of 1/2 organic lemon

Additional grated carrot

Eden Organic Black Sesame Gomasio

Directions: Melt coconut oil in a large pot. Add onion and salt, and sautee until onions soften. Stir in carrot and kale stems, then add water, bouillon, and split peas. Bring to a boil, reduce heat and simmer for 20-30 mins (until the peas soften to your liking). Ladle 1/3 of the soup into a bowl and set aside. Puree the remaining soup in a blender, then add the reserved soup back in. You may need to thin out the soup with water. Garnish with the lemon juice, grated carrot, and gomasio and serve!
