Recipe: GF Vegan S’mores Cookies

It’s OFFICIALLY summer!!!! We’ve dealt with a really wet spring here in Toronto. Hopefully things will start to dry up now, and we can get on with summer activities!

I don’t know about you, but to me it just doesn’t feel like summer without roasting a couple of marshmallows. I don’t get away somewhere campfire-able every year, so sometimes I have to improvise. Last summer, I came up with a recipe for Gluten-Free Vegan S’mores Cookies and, I have to say, they’re a pretty good substitute for the real thing. If the closest you’re getting to a fire this summer is a cooking fire, this is the recipe for you!

GF Vegan S’mores Cookies

Ingredients:

  • 1 cup Almond Flour/Blanched Ground Almonds
  • 3 Tbsp Coconut Flour
  • 6 Large Dandies Marshmallows
  • 1/4 cup Maple Syrup
  • 1/4 cup Coconut Oil
  • 1/4 tsp Baking Soda
  • 1/4 tsp Fine Sea Salt
  • 1 1/2 tsp Vanilla Extract
  • 1/2 cup Chocolate Chips

Preheat oven to 350 degrees. Combine all the dry ingredients (except the marshmallows) in a bowl. In a smaller bowl, combine wet ingredients (you will want to melt the coconut oil before adding to the wet ingredients). Add wet ingredients into dry and mix thoroughly. Form the dough into 12 1-inch balls and gently press onto a parchment lined baking sheet.  Cut the marshmallows in half, and press each into the top of one cookie. Bake for 7-10 minutes.

You’ll know they’re done when the edges of the cookies turn slightly brown. They will still be very liquid-y when you remove them from the oven. The coconut oil needs time at room temperature to set. Let them cool for 10-15 minutes, or until they’re easily moved without falling apart.
