A few weeks back, I posted a picture of some coconut flour pancakes I made on Moberly’s Instagram. I posted the ingredients list and, needless to say, people wanted the recipe. There was just one problem with that, though. I didn’t follow a recipe.
These pancakes are SO easy to make (and so hard to get wrong) that I just kind of throw ingredients in reasonable ratios into a bowl. I mean, I DEFINITELY got them wrong the time too much baking soda fell out of the mason jar I store it in (has a more hipster sentence ever been uttered?) but generally, you can’t screw them up.
But, I’m nothing if not a woman of the people, so I set out to create something resembling a recipe. I think I’ve done it! So, without further ado, here are:
Super Easy Coconut Flour Pancakes
Ingredients:
- 1/3 cup coconut flour
- 1/4 cup cashew milk
- 2 eggs
- 1/8 tsp baking soda
- 1/8 tsp sea salt
- 1 tsp vanilla extract
- 1 Tbsp coconut oil + more for cooking
- raspberries
- maple syrup
Directions:
Beat eggs together with milk, coconut oil, and vanilla. (I like to use room temp milk, or else the coconut oil solidifies into clumps.) Stir in baking soda, sea salt, and slowly add coconut flour. The coconut flour is slow to absorb the liquid, so stir until it forms a thick batter. If it gets too thick, add more milk or water. If it’s too watery, add more coconut flour. Heat coconut oil in a frying pan. Scoop batter into desired pancake size in the pan, and flip once the bottom begins to brown. Transfer finished pancakes to a plate, top with raspberries and maple syrup, and enjoy!
These pancakes are pretty filling – coconut flour is PACKED with fibre – so you may not be able to finish in the moment. If not, that’s okay! Pop your leftovers in the fridge, and reheat in the pan or in the toaster later!
