If you follow us on Facebook or Twitter or Instagram, you may have heard about our newest product from Le Petit Mas.
You may know them better as garlic scapes, but Le Petit Mas one of the first to grow them. In 1989, when they began farming them in Quebec, there was no standardized term, so they chose Garlic Flowers. Whatever you call them, garlic scapes are a great addition to your pantry.
These particular garlic scapes are special because they are organic, fermented, and don’t leave you with garlic breath! Because they are fermented, once opened, a jar can last 2 years in the fridge.
When we got them, I IMMEDIATELY took some home and started experimenting. You can use them in place of garlic cloves in any of your recipes. It takes approximately 1 tsp of garlic scapes to equal one clove of garlic, but I seldom skimp with this stuff.
My favourite thing to come out of my kitchen-scapades recently was my Avocado Garlic Scape Dressing. Depending on how thick you make it, you can use it as a dip, as a pasta sauce, or thinned out as a salad dressing. It’s quick, it’s easy, and it’s delicious. What more could you want?
Avocado Garlic Scape Dressing
Ingredients:
- 2 ripe avocados
- 4 Tbsp Le Petit Mas garlic scapes
- 2 Tbsp lemon juice
- 1 Tbsp dried basil
- 1 Tbsp dried parsley
- water, as needed
In a blender, add peeled and pitted avocados, garlic scapes, lemon juice, basil, and parsley. Blend, adding water 1 Tbsp at a time, until dressing reaches desired consistency. Use right away, or store in a sealed container in the fridge. Trust me – it won’t be there for long!
Feel free to play around with the amounts of each ingredient, and the flavours you add in. Often, my favourite recipes end up looking NOTHING like they did in the book.
